p1010194 150x150 Picnic: a Day on the Windsor Town Green (and a giveaway)Joe Rueter, chef at The Green Grocer, says the Windsor Town Green is one of his favorite picnic spots. “It has nice grassy areas, picnic benches in the shade and a huge water fountain. Come on the right day and you’ll find a concert, Shakespeare, movie on the big screen, or even the farmers market. There’s plenty to do on and around the Green just about any day.”  Rueter’s picnic menu has a Mediterranean feel to it that goes nice with a warm spring day and a 2007 Quivira Granache Rose . The picnic spot:
Cute shops (including The Green Grocer) surround the Town Green, which has lush lawns, a fountain, and plenty going on-especially in summer when it offer free kids movies on Tuesday evenings, the Farmers Market (Sundays 10 am to 1pm and Thursday evenings 5- 8 pm), free outdoor concerts and lawn games for kids and adults on Thursday evenings, and Shakespeare on the Green.

 The menu:

  • Mediterranean Orzo Salad
  • Truffled Beet Salad
  • Potato Salad
  • Turkey Bacon and Fontana Panini
  • Salmon BLT Panini

 If you don’t feel like cooking, The Green Grocer carries these.

The recipe:

 2 lbs large beets, Golden, Cayuga or Red (a mix is nice)
2 oz  truffle oil
4 oz cider vinegar
1 bunch tarragon, chopped
1 shallot, minced
salt and pepper to taste

 1. Wash beets and place in a 4qt sauce pot, fill pot with cold water and cover with a lid.

2. Bring pot to a simmer on the stove top and then place pot in a 375F oven for 45min or until beets are tender.

3. Drain beets in a colander and allow to cool while preparing other ingredients.

4. When cool enough to touch use a clean dish towel to rub the skin off of the beets.Clean them thoroughly with the towel removing all skin and the root ends.

5. Slice beets thinly into bite sized pieces and place in a serving dish.

6. Toss with the oil, vinegar, shallots, and tarragon and season with salt and pepper.

Serve chilled.  The dish will keep for five days covered in the refrigerator.  The flavor will also improve if prepared 24 hrs in advance. Serves 6-8.
